(COLORADO SPRINGS) — Homestead Collective has a comeback story just as great as the owner’s.
After the building closed its doors during the COVID-19 pandemic, the owner, Mitchel Yellen, almost sold the building. That was, until he had an epiphany, in which God told him not to sell.
However, the building was already under contract and the only way out was if the buyers dropped out. As fate would have it, that is exactly what happened, and the keys stayed in his hands.
Yellen went back to the drawing board and decided to bring all his businesses into one using the space.
“God just kissed me on the cheek,” Yellen said. “So that’s how I say it, because I’ve gotten these incredible kisses on the cheek from God. He goes, ‘I gotcha.'”
Homestead Collective will include Dad’s Donuts, The Till, Garden of the Gods Catering, and Campfire Pizza, so there is something for everyone at any time of day.
Yellen brought on Head Chef Joseph Bonavita, who is bringing things to the menu Colorado Springs hasn’t seen before. He worked with farmers around the country to harvest bison, and the true wild game options go as far as using USDA inspectors in the field with hunters.
The Homestead Collective also uses a hydroponic plant system, which lets them grow all their herbs and vegetables in-house, so everything is fresh off the vine.
“We’re going to have basil, tomatoes, cucumbers, rosemary, thyme, all bunch of herbs and some lettuces and rosemary growing it here,” Bonavita said.
They also make their own mozzarella and pastries in-house.
Homestead will be opening its doors to the public at 9633 Prominent Point on May 18.
